#13 – Freddy and Danielle Kaufmann of Proper Sausages
Say what you will about sausages. Make all the jokes you want. But these two aren’t kidding. When it comes to combining flavors and different kinds of meats, Freddy and Danielle Kaufmann are experts.
What was formerly just a stand at a weekend farmers markets has turned into a storefront in Miami Shores. Proper Sausages went brick and mortar a few months ago when slinging gourmet sausages to local restaurants (like Blue Collar and Eating House) wasn’t enough for Miami.
They make custom blends like The Proper, with Berkshire pork, black pepper, mace, and sage; and The Romagna, with rosemary, lemon zest and garlic. Sourcing locally, and giving an enormous push to Miami’s artisanal food movement, the Kaufmanns are ones to keep under close watch.

Danielle would tell you I taught her the value of Kosher salt, and I’d say she got me off the line and into this shop, so this question is easy, each other…we wouldn’t be here if we weren’t together.
